The First of Many Recipes

1 loaf of french bread sliced into 1/2 inch pieces
1-3 vine ripe tomatoes (figure 1/2 tomato per person) sliced to fit on bread
Mozzerella cheese sliced 1/4 inch thick – 1″x2″
Fresh basil leaves at least 2 inches long
Olive oil 1-2 cloves of fresh garlic peeled

Using a brush, paint one side of the bread with olive oil and rub with the garlic clove. Place on cookie tray and toast in oven on low broil until brown.

Place one slice of cheese, one slice of tomato and a basil on top of each individual toast. Drizzle lightly with a bit more olive oil salt and pepper to taste and serve warm!

Now, what I did today was to chop up my tomatoes, basil, and cheese, put it in a bowl, added the garlic, salt and pepper (all to taste) and just enough olive oil to coat.   NO ONIONS!!  They only use those in restaurants!  Stir it up and serve with fresh sliced bread or whatever you wish.  This is the easiest way to serve it when making a huge bowl for the crowd!
